Easy Cheesy Enchiladas
Our family could eat Mexican food four or five nights a week. We love it! And these easy cheesy enchiladas are one of the quickest Tex-Mex meals in my repertoire.
The fact that we nearly always have all the ingredients on hand and the recipe is so easy to adjust makes it one of my go-to meals whenever unexpected guests show up at dinnertime.
Ingredient List for Easy Cheesy Enchiladas
- olive oil spritzer (or a bottle of cooking spray)
- corn tortillas (I buy these in bulk and keep in the back of my fridge)
- grated cheese (I usually use Colby-jack)
- 1 onion, finely diced
- 1-2 cans of chili (with or without beans — your preference)
Instructions for assembling Easy Cheesy Enchiladas
Pre-heat oven to 350 degrees. Stack tortillas in a tortilla warmer or between two plates after lightly spraying the top of each tortilla with cooking spray.(I keep olive oil in a spray bottle for this purpose, but Pam works, too.) Microwave for 3 minutes.
Dice onion. I don’t sauté my onion for this dish, but you can if you want a milder flavor. Also, keep in mind that the more finely you dice them, the faster they’ll bake if you don’t wish to precook anything.
In a 9×13 pan, sprinkle a little cheese and onions on two tortillas at a time, then quickly roll them up to form enchiladas. Be careful, those tortillas are steaming hot!
When you’ve rolled as many as your family can eat (we usually make 2 pans full – about 3 dozen), top with chili, sprinkle a little cheese and onion over that, and bake at 350-degrees for 10-15 minutes, or until cheese begins to bubble.
Serve with tortilla chips and a fresh fruit or lettuce salad. Mmmm-mmm good!
